Egg bakes make a really fantastic meal-prep option. You can simply cook once and are set for breakfast for the next 5 days. Just a reminder, there is no rule that eggs can only be eaten at breakfast. You can also enjoy egg for lunch, a snack, and yes, even dinner!

Pasture-raised eggs have omega-3 fatty acids, vitamin D, vitamin B12, folate, vitamin A. A few other benefits to mention about pastured eggs is that they have the availability to eat, insects, worms, seeds, things that are out in nature. If you buy your eggs locally it is a totally acceptable question to ask the farmers what type of supplemental feed, they give their hens. They are usually more than happy to share and give you a tour and some fun facts about their flock also making for a great photoshoot or outing with the family.
How to Make a Beef and Broccoli Egg Bake
We use a dozen eggs in this, our chipped beef which we chop up nice and fine (you an also use leftover shredded beef, ground beef or any protein really), a bunch of broccoli, onion, milk of choice, salt and pepper, and goat cheese (you can omit if dairy free or Whole30 or use any cheese you like). This recipe is a fun play on beef and broccoli but breakfast edition. The prep time on this is quick only about 5 minutes everything together. We used 2 cups of frozen broccoli, but you can use 2 cups of fresh broccoli just make sure to chop it up nice and fine.
First step is to preheat your oven to 350ยบ and prepare your 9×13 baking dish with a spray of avocado oil or olive oil. Next you want to get your chipped beef started if it isn't already batch prepped and you can find those instructions right here. While you've got your meat browning, start cracking those eggs in a large mixing bowl. Using a wisk or fork is totally fine but I do prefer to use a hand mixer for my egg bakes because it gets lots of air in the eggs which helps to make the egg bake a little fluffier.
After you have your eggs mixed then you add in your milk and mix again. Next stir in 2 cups of broccoli, 1 diced white onion, 1 pound of chopped chipped beef, salt, and pepper, and ¾ of a log of goat cheese crumbled and mixed in. Save that last ¼ of the goat cheese to put a crumble on top before serving.
Once everything is combined pour the mixture into your 9×13 greased pan. Place in the oven at 350 for 40-60 minutes. Start checking at 40 minutes. Oven temperatures vary and so does the moisture from using frozen broccoli to fresh so the key to knowing when your egg bake is doing is giving it a little shake and the center should not giggle at all. If using frozen you'll want to check at 40 minutes and if the center is still wet add an extra 10 minutes and check again.If you are finding that your egg bake is not done, continue cooking and checking in 5-minute increments.
How to Serve Your Beef and Broccoli Egg Bake
When the egg bake is fully cooked, remove from the oven and let rest 5 minutes. Slice up a nice square, top it with goat cheese or whatever you like. Additional toppings could be avocado, pico-de Gallo, micro greens, roasted veggies, ketchup, salsa, roasted potatoes, the sky is the limit.

Beef and Broccoli Egg Bake {gluten-free, grain-free, keto, options for paleo, Whole30, dairy-free}
- 1 pound chipped beef (ground beef or other protein will work here)
- 12 pastured-raised eggs
- 2 cups broccoli (fresh or frozen)
- 1 onion, diced
- 1 cup milk of choice (dairy or non dairy)
- 6-8 ounces goat cheese (easily can be omitted, or changed to a cheese of choice)
- Salt and pepper to taste
- Preheat oven to 350 degrees. Prepare 9x13 baking dish with a spray of avocado oil or olive oil.
- Cook chipped beef following the directions from our original recipe here.
- Chop the cooked chipped beef into fine pieces.
- In a large mixing bowl, crack the 12 eggs. Using a whisk, fork, or hand mixer, mix until light and fluffy.
- Add in the 2 cups of broccoli, 1 diced onion, salt and pepper, and crumble ¾ of the log of goat cheese into the mixture. Mix all these ingredients together.
- Pour into your prepared 9x13 baking dish.
- Bake in the oven at 350 degrees for 40-60 minutes.
- Remove when the center of the egg bake is firm and does not jiggle.
- Let rest for 5 minutes, slice and serve.
- If using for meal prep let cool, slice, and put in airtight meal prep containers for the next 5 days.
